Quick Tapenade

  • 2 teaspoons inexactly pressed new thyme leaves, coarsely hacked (1 1/4 teaspoon)
  • 3 anchovy filets
  • 2 tablespoons escapades, washed
  • 1 garlic clove, minced (around 1 teaspoon)
  • 2 cups olives, like Nicoise or Kalamata, depleted and pitted
  • 1/4 cup in addition to 2 tablespoons extra-virgin olive oil


    Stage 1
    Finely slash thyme, anchovies, and tricks, and blend in with garlic.

    Stage 2
    Finely slash olives; add to bowl alongside oil.
